Persian Cukes
Seasonal Produce Highlight – Persian Cucumbers!
Persian cucumbers are the smaller, more delicate cousin of the large variety you find in the grocery store.  Persians have delicate skin and minimal seeds so they can go straight from the chopping board to your dish without peeling or deseeding. This variety also makes great pickles!  Find Persian cucumbers at Spring Valley and Bigg Riggs this week.  Also at the market: snap beans, tomatoes, peaches, greens, basil, eggplant, raspberries, blackberries, blueberries (from the following market vendors: Ashton Farms, Diaz Farm, Shamba Farm, Dunham Farms, Montoya Farm, Lopez Farm).

Fourth of July Cookies
Market to Table Recipe – Tabouleh
Tabouleh is an easy, perfect, summer side dish!  Tabouleh traditionally has minimal ingredients and since they all come into season at the same time in Virginia, it’s a great way to show off your market bounty.  Find mint and parsley from Bigg Riggs and tomatoes and cucumbers (try the Persian variety so you won’t need to peel or seed!) from almost any of our veggie farms.  With scallions and a squeeze of lemon, you couldn’t ask for an easier recipe!  http://www.foodnetwork.com/recipes/ina-garten/tabbouleh-recipe.html
